Home Baked Stories : Third Degree Steak & Mango Salad

Home Baked Stories is a pilot series showing the stories behind home cooked meals. Episode five features Jason “The Real” McKoy who is cooking Third Degree Steak and Mango Salad (recipe below).

Our first six episodes focus on cooks from the new homemade meal cooperative, MealKu.

How to make Third Degreed Steak
Prep time= approx. 8hrs in fridge and 10 min. on grill.

6 cloves garlic, minced
1/2 red onion, chopped
2 limes, juiced
1 medium jalapeno chile pepper
2 tablespoons fresh thyme leaves
1 cup loosely packed cilantro leaves
3/4 cup corn oil
2 tablespoons honey
3 pounds beef flank steak (or any filet steak)
sea salt to taste

  1. Put the garlic, onion, lime juice, jalapeno, thyme, cilantro, corn oil, and honey into a bowl and mix them all up for a bit until it reaches a good consistency. Marinate the flank steak with 1/2 of the mixture in a resealable bag overnight in the refrigerator. Reserve the rest of the puree to use later as a sauce.
  2. Preheat a grill for medium-high heat.
  3. While grill is warming, remove the meat from the refrigerator and let sit at room temperature for at least 30 minutes. Discard any marinade left in the bag. Liberally season the steak with the sea salt, and cook to desired doneness, approximately 4 minutes per side for medium-rare.
  4. To serve, slice the steak against the grain into 1/8 to 1/4 inch slices, and drizzle the remaining marinade over the meat.

Mango Salad
Prep time= 15 min.

2 tsps balsamic vinegar
2 tsps fresh lemon juice
1 tsp sugar
1/2 tsp salt
1/4 tsp black pepper
3 tbsps extra-virgin olive oil
1/3 cup fresh cilantro (leaves) or 2 tbsp of dried cilantro
1 red onion (halved lengthwise and thinly sliced crosswise)
1 lb mango (peeled and cut into strands)
1/2 box grape tomatos (quartered)
1 tbsp thai fish sauce
1/2 cup lime juice
1 tbsp ground chili paste

Chop ingredients and mix until delicious.
